Aug ’19 Visit to Washington – Middle school colleagues

Elona Loewen was gracious enough to allow me to stay with her for 5 nights. Elona and I used to go for walks together fairly regularly when we lived a few blocks from each other. We both have missed our long talking walks! It was great staying up late talking and trying to watch a couple Hallmark movies. We went shopping several times including a trip to CFM (Contractors Furnishings Mart) to look at possibilities for countertops, cabinets, backsplash and flooring for her much anticipated kitchen remodel. Elona has talked about wanting to redo her kitchen for a few years now. She has her new appliances already in, so it was time to help her get some combinations figured out to be able to move forward. We were both excited with the final combination. I can’t wait to see it all finished.

On Wednesday, Aug 07, Elona hosted a brunch at her house for school colleagues. Unfortunately, it wasn’t the best day for quite a few, but I was very grateful and was so glad I got to see those who could make it. We decided to do “omlettes in a baggie”. Everyone takes a quart-size freezer bag, writes his/her name with a sharpie on the outside of the bag, put all the ingredients they want in the omelette, and then get a ladle of beaten raw eggs. Zip the bag closed while trying to get as much air out as possible, and keeping the egg mixture in the bottom third of the baggie. Baggies were then placed in a pan of boiling water and let them cook for about 15 minutes. The omelettes come out of the baggie and are SO moist! This was fun! I’m anxious to buy a couple of “Stashits” that are reusable, silicone ziplock baggie to make these in the motorhome! Forgot to take pictures. 🙁 Joan Weiss came later, but-no picture.

Thank you, Liz Frederickson and Kaye Lysen for each meeting me for coffee at Starbucks since you weren’t able to make it to the brunch. I even ran into Dave Stangland while visiting with Kaye. Boy was he surprised to see me when he walked in! He just retired this year.

Thank you again, Elona! would not have been able to see them all individually. And, thank you to all who were able to squeeze me into their schedule while I was there! It meant a lot to see each one of you!!

It was awesome to also get to spend a night with my dear friend, Sharon Fabrizio the following Monday since she was enjoying Seaside, OR when we had the get-together at Elona’s.
